Spinach & Mozzarella Stuffed Chicken

Ingredients

  • 4 8 oz. skinless Chicken Breast
  • 2 cups baby spinach
  • 2 cups fresh mozzarella
  • salt and pepper to taste
  • 4 tablespoons prepared hoisin sauce

Instructions

Preheat oven to 350F      

Pound chicken breasts to 1/4 inch thickness and season with salt and pepper on both sides      

Cover with baby spinach      

Add chunks of fresh mozzarella      

Roll up and secure with toothpicks or kitchen twine      

Brush with hoisin sauce      

Bake for 35 minutes and serve

The WW Chicken stuffed with Spinach & Mozzarella Inspiration

My inspiration for this Spinach & Mozzarella Stuffed Chicken Breast recipe comes from tossing random ingredients into the cart. I grabbed some baby spinach and a couple of chicken breasts and decided right then what was for dinner. I’m a fan of stuffed meats with ooey gooey cheese and veggies so that’s exactly what I did.

How to Make Spinach & Mozzarella Stuffed Chicken Breast

I pounded out a couple of chicken breasts, layered on some baby spinach, added chunks of fresh mozzarella then rolled up the chicken. I secured mine with toothpicks, but you can use kitchen twine if you want.

I sprinkled on some salt and pepper, added some fresh basil, and baked on 350 for 35 minutes.

When the chicken was done it didn’t have that much flavor so I got the idea to coat it with prepared Hoisin sauce and bake it for another 10 minutes, just to give it a sweet glaze. That was exactly what it needed because when it came out, this time, it was mouth-watering good.

Is WW Chicken stuffed with Spinach & Mozzarella Keto?

This recipe, as is, probably shouldn’t be eaten on Keto. Of course, if you’re doing the IIFYM approach and have the carb budget, go for it! Otherwise, you may want to omit the hoisin sauce or make your own without the non-keto ingredients.

By removing the hoisin sauce you’ll cut out a lot of carbs and be left with a perfectly keto meal. I haven’t personally tried this recipe, but there’s a homemade keto hoisin sauce recipe over at My Keto Kitchen.

Can I Freeze Leftovers?

Yes, you can definitely freeze any leftover stuffed chicken breasts! You need to let them cool completely before putting them in individual sandwich bags. Let them thaw overnight in the refrigerator and you can heat them up in the microwave the next day.

You can also keep leftovers in the refrigerator for up to three days in an airtight container.

What If I Don’t Like Spinach?

Spinach is not my favorite leafy green vegetable and I’m not alone. If you don’t like spinach you can substitute it for ripped kale, swiss chard, beet greens, or escarole. You can, of course, leave the greens out and replace them with

  • Sliced peppers: try cutting up a jalapeno pepper for a twist on the classic jalapeno popper recipe
  • Mushrooms: dice up a handful of mushrooms and sprinkle them over the mozzarella cheese
  • Broccoli: cut up about a cup of broccoli florets and layer them over the cheese
  • Asparagus: Cut asparagus into 2 inch pieces and roll the chicken up around it

You should definitely get creative with your replacements. Choose something you know you like and go crazy with it!

I will share one of my family’s favorites- Scrambled Hamburger and gravy over mashed potatoes– Scramble your hamburger in the skillet (I used cast iron) add some Lipton’s Onion Soup or my favorite- Watkin’s Onion Soup Mix- and water to the level you need gravy- to thicken you can use either corn starch and water or flour and water that were mixed together before adding to the water (now simmering boiling) scrambled Hamburger and soup mix and water– thicken to your family’s liking. We used Instant Potatoes when I was tired or fresh from the garden potatoes that had been cooked and mashed when I wasn’t! It is super easy and well-liked! I hope you will like trying it!
