  • ½ lbs Parsnips
  • ½ lbs Potatoes (either red or yellow stew potatoes)

  • 1 Onion
  • 2 oz Olive Oil
  • 2 tsp salt
  • 1 tsp Pepper
  • ¼ bunch Parsley (chopped)

How To Cook Root Vegetables

I’m about to show you why this simple root veggie recipe is one of the best! Minimal prep work, fast to cook, and easy to enjoy!

Preheat the oven to 375° F

Wash the Veggies; peel the Carrots, Sweet Potato, and Parsnips.

Cut all veggies into ½” bite-sized pieces.

Steam the carrots, potatoes, sweet potato, and parsnip for 10 minutes. (optional)

Toss the veggies with the onion in a bowl with oil, salt, and pepper. Transfer to a sheet pan lined with foil.

Roast for 50 minutes, stirring veggies about halfway through. Add extra time if needed by increments of 10 minutes. 

Remove from the oven, salt, and pepper to taste if needed.

Garnish with Parsley.
