What are smores?

Smores are a combination of chocolate, marshmallows, and graham crackers. They’re usually popular when camping and made around the campfire, but you can make them easily in any type of dessert.

Do I have to make homemade cheesecake crust?

Nope, not at all. I love making the crust because it’s delicious and easy to do, but you can easily buy the mini crusts at the store or experiment and use something else.

I think that using mini phyllo dough would be yummy as well.

Ingredients to make Mini Smores Cheesecake

Just gather the list of ingredients to get started.

Graham cracker crust 

  • 1 ¼ C ground graham crackers 
  • 3 tbsp sugar 
  • 5 tbsp unsalted sweet cream butter, melted 

Smores Cheesecake 

  • cream cheese 
  • sugar 
  • sour cream 
  • pure vanilla bean paste 
  • eggs 
  • Nestle Toll House hot fudge sundae baking pieces

Chocolate Ganache 

  • semi-sweet chocolate chips 
  • heavy whipping cream 

Topping 

  • whipped cream 
  • sugar waffle cone pieces

How To Make Smores Cheesecake Bites

Preheat the oven to 325 degrees and line the cupcake/muffin pan with the cupcake liners 

Using a medium bowl, whisk the graham cracker, sugar, and melted butter until a wet sandlike mixture forms 

Scoop 1 ½ tbsp of graham cracker crust into the cupcake liners and press into an even bottom using a flat bottom glass or measuring cup

Bake the crust in the preheated oven for 5 minutes

Remove and allow to cool completely 

Preheat the oven to 350 

Using a large bowl, beat the cream cheese and sugar until combined and smooth Beat in the sour cream and vanilla until combined and smooth 

One egg at a time, beat until combined 

Fold in the 1 ½ C of the chocolate and marshmallow mix

Fill the cupcake liners about ¾ almost full and bake in the oven for 25-30 minutes or until the cupcakes are set. It’s okay if there is a slight jiggle in the center! 

Remove and allow to cool on the counter until room temp before moving to the fridge overnight 

Using a small pot, bring the heavy whipping cream to a simmer and pour over the ½ C chocolate chips and let sit for 1 minute before whisking until smooth 

Spoon 1 tablespoon of ganache onto the top of the cheesecakes

Top with whipped cream, the nestle sundae mix, and a broken piece of sugar waffle cone Enjoy!

Can I freeze cheesecake?

Yes, you can freeze cheesecake! Just be sure to store it in the airtight container and keep it in the fridge.

You can thaw it out quickly by moving it to the fridge from the freezer and giving it an hour or so.

Can I make other flavors of cheesecake?

You bet! You can easily change up the flavor of the cheesecake by just changing up the toppings. Add some cherries on top for cherry cheesecake, or leave them plain. So many options.

  • 2 - 8oz cream cheese, softened
  • ⅔ c sugar
  • ¼ c sour cream
  • 1 tsp pure vanilla bean paste
  • 2 large eggs
  • 1 ½ C Nestle Toll House hot fudge sundae baking pieces (chocolate pieces only)

Chocolate Ganache

  • ½ C semi sweet chocolate chips
  • ¼ C heavy whipping cream

Topping

  • Fresh whipped cream
  • Sugar waffle cone pieces
