Vegetarian Beef & Broccoli
When the new year rolled in, I wasn’t quick to make a resolution. I’ve made them every year that I can remember and always wind up disappointed in myself. I wanted to take a different route this year, something I knew I could stick with and be proud of myself for. That’s why I traded in the resolution for vegolutions. See, I’m far from a vegetarian, but I knew I needed to cut some of the meat from my diet and add in healthier options.
The problem is, I have a long list of foods I won’t eat, and most of those foods are vegetables. Onions, tomatoes, cabbage, celery, yum yum. I had to come up with new recipes that I would love so I could stick with my vegolutions. My first attempt was a successful vegetarian dish with beef and broccoli.
Another issue I have is time. I have spare time, but not a lot. I don’t want to waste that time prepping food and cleaning up. I also don’t want to just throw something together and hope that it tastes good. I want to skimp on calories and time, not flavor!
Around the time that I made my vegolutions, I found myself at Walmart grocery shopping. That wasn’t as much fun as I would have hoped since nearly everything had something I wouldn’t eat. When I made it to the frozen foods section, I found the answer, staring me in the face. MorningStar Farms®. I had seen the brand before, but I assumed since I wasn’t a vegetarian, they weren’t for me.
That was a bad assumption because MorningStar Farms is a veggie cuisine for anyone trying to eat healthier. It’s convenient which makes it a good choice for busy parents and workaholics. I decided to grab a few bags of MorningStar Farms products and see what I could come up with. I picked up some Great Value vegetables too since they’re affordable and convenient.
You don’t have to be a vegetarian to love MorningStar Farms products. You also don’t have to give up good food in order to eat more vegetables. It’s the best of all words, and I’m excited to try even more recipes.
Vegetarian Beef & Broccoli
Ingredients
- 2 tbsp + 1 tbsp canola oil
- 1 bag Farms® Meal Starters® Steak Strips
- 1 small onion, chopped to your liking
- 14 oz. bag of Great Value™ broccoli florets
- 2 garlic cloves, minced
- 3 tbsp. fresh ginger, minced
- 3 tbsp. reduced sodium soy sauce
- 2 tbsp corn starch
- 1 tbsp. distilled white vinegar
- 2 tbsp. light brown sugar
- 1/4 cup water
Instructions
Heat 2 tablespoons of canola oil in a medium pan.
Add steak strips and heat through, stirring often.
In a new, larger pan, add the remaining canola oil and saute onion until translucent. Add broccoli.
Cook over medium-high heat until the broccoli starts to get tender, about 10 minutes.
Mix remaining ingredients in a bowl. Once the broccoli is mostly done add the sauce.
Add steak strips to the broccoli and stir to coat with the sauce.
Cook until the sauce begins to thicken and coats the strips and broccoli.
Serve as is or over rice.

I tried Morning Star “meats” about a year ago and they were pretty good! I was suprprised!

I haven’t tried Morning Star Farms yet but they look so easy to prepare and delicious as well! I hope I see those value packs in our Walmart soon because it’s hard to cook meals with two kids. LOL.
