Saint Patrick’s Day will be here before you know it and it can be such a fun holiday to celebrate. There are lots of fun crafts, games, and foods that you can make and play to make the day special for your kids. The color of St. Patrick’s day is green so why not surprise your kids with some green food? Making it colorful always makes food taste better when you are a kid, and it’s fun! Start the day off with some green scrambled eggs? Just add a couple of drops of green food coloring to the eggs when you scramble them.

Watergate Salad Recipe

A quick and delicious green treat that kids are sure to love is Watergate Salad. It’s easy to whip up and has limited ingredients. You just need a bag of mini marshmallows, a can of crushed pineapple in juice, a box of instant pistachio pudding, and an 8 oz. container of Cool Whip.

Yield: 15 servings
Prep Time: 4 minutes
Additional Time: 6 hours
Total Time: 6 hours 4 minutes

This rich and creamy dessert is a classic treat and perfect for any St. Patrick's Day celebration.

Ingredients

  • 1 (3.4 oz) package instant pistachio pudding mix
  • 1 (20 oz) can crushed pineapple, with juice
  • 1 1/2 c miniature marshmallows
  • ½ c chopped pistachios or walnuts (optional)
  • 1 (8 oz) container frozen whipped topping, thawed

Instructions

  1. Empty pudding mix in a large mixing bowl
  2. Drain juice from pineapple and set pineapple aside. Whisk juice into pudding mix until there are no lumps
  3. Add marshmallows and nuts (if using) to the mixture
  4. Fold in the whipped topping with a spatula (don't stir, just fold until blended)
  5. Refrigerate for 6 hours(or overnight). Serve chilled

There are all kinds of other green foods that you can serve to make St. Patrick’s day more fun like kiwi’s, green grapes, or green beans. You can also add food coloring to different foods like vanilla pudding, or cake mix to make them more festive. If you like you even serve some traditional Irish dishes like Corned Beef and Cabbage, Irish beef stew, or Shepherd’s pie and Irish soda bread. Leprechauns are the mascot of Saint Patrick’s day and these mischievous creatures have been known to wreak havoc around the house on their special day. For example, turning the toilet bowl water green, leaving gold foil-wrapped candy in shoes, stealing all of the “charms” out of the Lucky Charms cereal, or leaving green footprints or four-leaf clovers scattered around the house. Some leprechauns even leave little “you can’t catch me” notes for you and your children to find.

If you think that there might be leprechauns running around your home this year, you could always set up a DIY leprechaun trap to see if you can catch him! There are lots of different tutorials for leprechaun traps online, but you and your kids can make a simple one by painting any kind of box green and leaving a rainbow on it.

Leave a few pieces of gold foil-wrapped candy in and around the trap, you know leprechauns can’t resist anything gold. While you aren’t likely to find a leprechaun inside of your trap, they are quite crafty after all, you may find evidence that he has been nearby like a trail of glitter or tiny green footprints.

If you are looking for some other fun ways to spend St. Patrick’s day with your kids how about setting up a scavenger hunt where they search for green items or gold coins scattered around the house? You could also have a green-themed fashion show, or attend a local St. Patrick’s day parade or festival. If your kids are a little bit older they might enjoy learning more about Ireland, St. Patrick, and how the holiday is celebrated in Ireland. 

You can also put on some Irish tunes or YouTube videos and have a dance party, color St. Patrick’s themed artwork to decorate your home, or read some Irish folklore together.
