When it comes to lunch, I prefer mine to be quick and easy, as do most people. This is especially true when you have a fixed time period for lunch. That's why I love this quick and easy mini pizza recipe. The real hero of this recipe is Bays® English Muffins. English muffins may be most common at breakfast but they're a delightful alternative for lunch, dinner, or snacks too.
For this recipe, the English muffin halves play the most important role of the pizza - the crust! There's no waiting for the dough to proof and rise, you just split the muffins and the rest is a piece of cake. Since Bays English Muffins are pre-sliced they are incredibly easy to use and enjoy in a timely fashion.
You can find Bays in the dairy case of your supermarket, carefully chilled for freshness. They're definitely something to keep on hand since they elevate any meal, no matter what time of the day!
The best part of these mini pizzas is that you can add any toppings you want. They are perfectly customizable, so they are perfect for any gathering or occasion imaginable. They would be a fun addition to sleepovers and birthday parties. Just set up a DIY toppings bar with fresh veggies and meats and let guests go crazy with their personal pizzas.
Due to their versatility, these English Muffins can become the foundation of many delicious recipes. For one, try making mini ham pizza. You can also spin it into a sandwich for a quick breakfast or a delicious snack any time of day. Other toppings besides ham that go great with the muffins include eggs, grilled shrimp, avocado, hummus, cream cheese, and more.
I make my own pizza sauce, but any sauce will work for these mini pizzas. If you want to make your own it's fairly straightforward - tomato sauce, olive oil, garlic powder, onion powder, Italian seasoning, salt & pepper, and if you like your sauce sweet, a little bit of sugar. Since everyone's tastes vary you'll want to add a minimum amount of spices to the sauce to start. Taste it as you go, adding a pinch here and there of what you feel it's missing.
If you're looking for the perfect quick and easy, completely delicious recipe for lunch then this is it! Be sure to pick up Bays English Muffins from the dairy section and then experiment with toppings.
