French Toast Sausage Roll Ups

I have always been a fan of quick and easy meals. Yes, I love to cook and bake, but if I can cut corners you know I will! With this recipe, we cut a huge corner with Jimmy Dean® Fully Cooked Pork Sausage links. Not only does it save a ton of time, but Jimmy Dean® is a brand I’ve known and trusted for as long as I can remember.

With the holidays coming these French toast & sausage roll-ups are the perfect time saver. Since we use Jimmy Dean® Fully Cooked Pork Sausage, they’re ready to eat in no time! They’re super simple to make.

Start by preheating the oven to 350F and lining a baking sheet with parchment paper.

For the French toast mixture, just mix 3 eggs, 1/3 cup of sugar, 2 teaspoons cinnamon and 2 tbsp milk together in a large bowl. Set it aside.

Cut the crusts off (or leave it on if you don’t have picky eaters) of 12 slices of bread and roll them out as thin as you can without tearing them. Place a Fully Cooked @JimmyDean Sausage link on the bread, roll it up jelly-roll style, and dredge it through the French toast mixture. Sprinkle with cinnamon and sugar and place on a lined baking sheet. Repeat for remaining bread.

Slide the baking sheet in the oven and bake for 15 minutes.

You can add more cinnamon + sugar, powdered sugar, syrup, etc… Just be quick because these will be gone in a flash!

Ingredients

  • 12 slices of bread
  • 12 Jimmy Dean fully cooked sausage links
  • cinnamon and sugar, for sprinkling

Instructions

  1. Preheat oven to 350F and line a baking sheet with parchment paper.
  2. Mix eggs, 1/3 c. sugar, 2 teaspoons cinnamon and milk together in a large bowl. Set it aside.
  3. Cut the crusts off of bread and roll them out as thin as you can without tearing them.
  4. Place a Fully Cooked Jimmy Dean Sausage link on the bread, roll it up jelly-roll style, and dredge it through the French toast mixture.
  5. Sprinkle with cinnamon and sugar and place on a lined baking sheet. Repeat for remaining bread.
  6. Slide the baking sheet in the oven and bake for 15 minutes.
  7. Remove and sprinkle with more cinnamon & sugar or powdered sugar, or eat plain.
